Solution
After 4 days I got it working. I was about to wipe the device. For some reason the Gtalk Servicebooks isnt installed when the device receive its servicebooks. Follow these instructions to add the Gtalk Servicebooks to your existing Servicebook.
First download the tools:
Magicberry (for editing .ipd backup files) -

Gtalk Servicebooks (i made this file from a sample found on the net) -

1.) Use your Blackberry Desktop manager to backup only your service books to an .ipd file. Make a copy of this .ipd file to work with. Keep the original file safe somewhere.
2.) Open the Gtalk service books backup file (the one you downloaded from filehost) with Magicberry. Check the 3 entries. Open your backup servicebook to see if the identical 3 entries are there. If they are, this solution might not be for you.
3.) Open the Gtalk backup servicebook with hex editor XVI132. Check the window on the right. Click the empty block next to the word “Service Book” on the second line so that it is highlighted. Hold in your shift key and press the down arrow so that it can highlight everything from there up to the end. Click Edit – Clipboard – Copy.
4.) Now go to File – Open and select your backup servicebook file and open it.
5.) Do not click anything. See on the right and move the scroll bar right to the bottom. The last byte / character “K” should be highlighted.
6.) Click Edit – Clipboard – Paste. This will paste the Gtalk servicebooks into your servicebook backup file.
7.) Scroll to the bottom again and the last byte should be “K” again.
8.) Click File – Save As and save it under a new name with the .ipd extension.
9.) Open the new file with Magicberry and check to see the new entries for Gtalk.
10.) Restore this new servicebook file to your Blackberry via the BB Desktop manager.
11.) Take the battery out for a few minutes and stick it back in.
