H265 encoding

Hi, I am trying to identify the best standard way to encode documentary type movies in to x265 codec.
Particularly David Attenburough stuff.

My query is specific to the TUNE option:

NONE
PSNR
SSIM
GRAIN
FAST DECODE
ZERO LATENCY

I have left the default as NONE but when i encode the documentary AFRICA - CONGO, i can see some parts where there are lines running across objects almost like an interlacing look.
The original source BLU RAY does not show this.

Not sure if this is a TUNE issue , or if this is another option

Why don't you use Handbrake and leave it on the default settings for x265?
