I know how IPTV works. My question is if the premium service you can sign up for in the Tivimate app have the SA channels?

TiviMate (Premium or otherwise) is not an IPTV provider, which you somehow think it is.
There are no channels provided by the app itself. As stated by others, your IPTV provider takes care of that.

OK Thanks then.... I thought that by signing up for the premium version it also automatically signs you up with a iptv provider of some sorts. Maybe loosing my mind, but sure it gave me this option last time I clicked on "activate premium" account.

Anyway. I have been testing a provider on another app now for some time. As always, not consistent. Sometimes it works OK for days, other days it constantly buffers. Not worth the hassle for me. Same story when I tested various providers a few years ago.

The mods catch a lot fast, some they leave, either because they are busy else where, or they wait for someone to report him, or decide there is milage to be had, by giving him some rope/slack. Not privy to the process.
