I am a bit of a chilli addict and so over the k@k you get at supermarkets. The best chilli I can find is when we go on bush holidays. I pick the stuff up from the little road stalls and home industry shops dotted around.
So today I decided to make my own. I wanted to share it and hoping there are other chilli addicts out there that will share back. Keen to see what awesome recipes exist amongst MyBB forumites.

Quantities are not hard rules. I kind of went with my gut and sample recipes I found on the net.

Ingredients
650g chilli's from food lovers.
200ml white whine vinegar
1 large red pepper
Black pepper corns (to grind)
600g diced tomatoes
200g sugar

Method
Put everything in a pot - with a healthy dose of ground black pepper - and bring to the boil. Boil for one minute stirring occasionally. Turn down to simmer for another 7 minutes - stirring occasionally.

Allow to cool and stick it in a blender and turn it to a nice sauce. I let the machine run for a few minutes. Stop when thick/thin enough to your taste.

Sterilise some bottles, bottle and refrigerate.

It is estimated it should last just over 3 weeks but some peeps reckon 3 months if the bottles are properly sterilised. I will update when I have personal experience.

haha thought you ment chili as in like meat sauce. I was very confused when i thought you were buying it ready made from food lovers.
 
I make a Garlic, Lime chilly .. I'm still trying to refine but I think it's a winner... it's a limey garlic chilly goes with almost anything..!

I use:

2 kg garlic peeled
1 kg green chillies
1 bottle white wine vinegar
1 bottle of oil
1 bottle of pako lime pickle
salt to taste

Basically after you've spent 3 hours peeling garlic you add all the ingredients into a blender and bottle... my last batch was hot, very tasty... if anyone tries it let me know...:)

try peanut oil it has less flavour than sunflower and olive oil.
I also use pickling Masala (the Raj one I think it is called) I find it better than the Robertson one.
 
I used olive oil last time, but I didn't use a full bottle.

It taste great!!! The garlic wasn't strong while eating but about an hour later... Garlic..!!

I think the trick is to stick to a full bottle of oil and next time I might use sunflower. An Indian colleague normally makes it for me.. he uses sunflower oil.

Same - I was hoping for a meal, not a condiment. :o
 
Personally I like my "hot sauce" to have a bit of texture, so I cut things up finely before putting in the pot...

In terms of peri peri sauce, the best I've ever had have been from a few of the pubs up in the Centurion area.... somehow they got the recipe 100% but they would never share it with me.
