Hi so..
we moved from 10mbps adsl to 100mbps wirless internet. (down and up) we are a family of 4 people and our house is fairly average sized.

Currently standing.. We only have a single ethernet cable going into our adsl router now being used as an AP from our wireless internet dish. The setup feels like it needs more

If you're trying to achieve better WiFi coverage take a look at Ubiquiti gear, it won't let you down.
Otherwise, I'm not really sure what "needs more" means.

Hands down, if your budget allows for it, get a ubiquity UniFi AP or two as well as a decent router to maximise throughput and cover your whole home. They look great and work even better.

If your budget is a little smaller, try out a Mesh solution. There are a range of devices available from Tenda, AirTies, Netgear and more.

We've become fans of the Tenda kit. It's dead easy to configure (using an app on your phone) and throughput is consistently great. The Tenda Nova Mesh Lite is a well priced 2 unit mesh solution (about R1k) and will give you 60 Mbps + throughout a 200-250m2 home on a budget. The Nova Mesh 3 unit solution (about R4k) will give you 100 Mbps throughout.
