Good meat: somewhere between English and medium rare.

Cheap meat: can do well done.

In both cases it should have a thin charred crust on the outside.
 
The rawest the better as long it's hot inside.
 
It all depends where I am. I don't do Spur but if I did it'll be med well. At Cream it would be rare. Concern is cleanliness
 
Depends on the meat, some I'll go rare to medium rare while something like oxtail will be well done after 8hrs in the oven at 150C
 
Extra well done, like the outside of that pic. For some reason places like Spur don't seem to understand this and bring me medium even with emphasis on WELL done. I send them back and two minutes later they come back with something between the last two pics. So I tell them however long you had that thing on the grill put it back for that long.
Yea , I’ve never seen ‘overcooked ‘ in a steak house - seems they deliberately undercook it a bit to reduce wastage if it’s sent back - underdone is easily fixed .

When you order anything over medium in a restaurant you also get the worst cuts of meat as the more you convert your meat into carbon the less chance there is of telling.

There's always a risk, but in general if you have a healthy animal the only risk is in the transport and preparation of the meat. Searing the outside will kill any pathogens so you should be fine.

I mean, duh.
 
My fiancee also used to eat well done exclusively, because of the juice and the look of the meat. She concedes that medium (or more medium well in the image) definitely tastes better.
Pretty much how I started on medium/medium rare, a few times of fillet and rump at my friends. You really can't argue with a decent fillet around medium rare...
