How often do you change your chip oil?

That is why we have never used a deep frier in the home environment. Takes too much oil. We filter the oil every time we use it and we never fry chips in oil used for other things. The oil migrates form being used for chips, to frying other things after three rounds of chip making.

The older the oil, the better your chips taste.

And the better it fries. I always scoop a cupful of old oil into the new oil when I change it.

Only deep fry chip and filter when needed but exchange after about 5 times. Never let the oil smoke that's when it starts getting ugh

Very nasty stuff form when you use the frying oil for too long. It oxidises and "heavies" form in various guizes of nasty polymers. It is actually regulated as per Government Gazette. More information here: http://myoilguide.ufs.ac.za/default.aspx?id=17

I use a regular pot and a smallish one and make chips once every two weeks or so. I never really change the oil because I always recover less oil so the next time I make I'll need to top it up so I always have a mix of old and new.
