How spammers get your email address

What about conferences and events that require business cards to be handed in for, say giveaways, etc? Also random competitions online and in shopping malls that require you to fill in your person details. What do they do with that info?

Sometimes it's positive: such as Oracle SA somehow getting a hold of my personal email address and sending me an invite to their Java 9 launch event in Sandton. Most times it's annoying spam.

Email SPAM is not so much an issue... what vexes me is telemarketers - had a LOT of unknown \ private numbers phoning me all throughout last week.
Same is true for me. I get almost no spam emails. Far more marketing calls / sms's.
 
Having a big headache atm with spammers spoofing a client's email accounts and sending them spam from seemingly their own accounts. If you reply to the messages, it gets delivered to their inboxes like any other message.

Already changed passwords across the board, but that had no effect whatsoever.

The spam firewall does catch a few of them, but most of it gets delivered.

Any suggestions on how to beat them will be appreciated.
