Android 8 EMUI 8. When in some other apps I click on the contact number, Skype is invoked instead of built-in dialer app. I don't have Skype-out credit and I don't understand why Skype should replace a dialer. It is somehow an invasive behaviour. Anyone experienced this?

Not too sure on your Android skin but on mine it is Settings/Apps/Default Apps. Change it to the built in dialer and you are sorted

Not sure as well, as I don't have a EMUI skin based device, AFAIK you have to navigate to your Settings, under Apps or Installed apps, find your Skype app, and clear the defaults.

Many thanks, now dialer is invoked as usual. There was something not blank in "Open by default" -> "OTHER DEFAULTS. I did press "Clear Defaults", now it says "No defaults set". I don't really understand this option.

I also did remove "Draw over other apps" option, as in most cases I don't like such things.

so
1 according to what you just did skype isn't your default neither is the phone dialler , but it will be offering you an option nextime you dial it should it pop up make sure to choose your normal dialer and choose it but choose the always option that will set your dialer as the default again and should stop skype.
2 - draw over other apps easiest to explain is certain apps can pop up over others the facebook messenger head bubble does this so it's a bit of if you happy or not with it having that power

It never happened to receive such offer. I think in EMUI 8 changing default dialer is not allowed, at least there is no such user selectable option in the Settings app. The "Clear defaults" option is still a mystery. Default dialer do not allow to enter *#*#... 'secret' codes, so I tried in the past to sideload standard Google dialer, it failed and I gave up, but it was couple months ago. Skype was installed just before Christmas and phone hasn't been reboot since. Problem appeared the day the phone was restarted.

If anybody can shed some thoughtful information, I would appreciate.
