I would say rather start a Twitch channel that plays one of the top games.

Starting a channel is easy.
The hard part is posting as much as possible, building up viewers, figuring out what works and what doesn't...and keeping at it for 1..n years.

The YouTube channel idea sounds good. But I agree with the previous commentator that if you only make videos about games, you'd better create a Twitch channel. There will definitely be a lot of views, although the competition will be more serious... The main thing isn't to be lazy to make quality content and the viewer will find you.
