Ice Cream

Have one of these but the gearing is failing fortunately.

Not being able to use it has saved me a fortune.

Anyone make their own?
Ice cream machines - which one?
Recipies?
I have the krups 9000 and I use a combination of French, egg and sugar method. You have to prefreeze the basket for at least 48 hours for best result at min -18c.

So isn't diet or non dairy safe. Basically:

200
mldouble cream
200
mlorganic cream
150
mlbutter milk
150
mlmilk
10
mlvanilla essence
200
grcondensed milk
2
xeggs

Additional addins for other flavors:

100gr peppermint crips (you have to properly ground it and not melt it otherwise it's fubar)
30gr raw cacao (the proper ****)
30 gr milo
30 gr instant coffee (think it was 30gr)

Basic method (I use a stand mix for the mixing):
1. Mix milk, buttermilk, vanilla essence, condensed milk and eggs well without whipping it up into something else (medium to low speed)
2. Then slowly mix in the creams (low speed)
3. Put that in the fridge for at least 8 hours. (double glad wrapped, one layer goes directly onto the mix so there's no air and another over the bowl if it doesn't have a lid)
4. Take out the pre-frozen basket and prep it for mixing.
5. Take out the ice cream prep and stir it.
6. Add to the basket and mix unit desired consistency (normally within 20-40 mins depending on room temp)
7. Eatup or store.

Reasons why it is kak or icey:
Your basket wasn't properly pre-fozen
Your icecream mix wasn't properly chilled
You didn't mix the ice cream mix enough for it to firm up properly
You didn't store it in a pre-cooled container in the freezer

Anything else than the egg and Frech (creams) method takes tinkering to get best result. Sugar and proper cream helps for a good concistency.
