Depends on how they're mounted; the bodywork may not be able to handle the mounts. Also, you now have to deal with a bunch of hard steel tubes inside the car, instead of carefully designed pillars, and of course, side and pillar airbags will probably no longer work. Very few road deaths nowadays, I would think, result from collapse of the car's roof. Cars are designed to handle rollovers without collapse.
