If you have multiple episodes being re-encoded it will adjust each episodes size to fit onto one dvd disc, as i mentioned the app i use is convertxtodvd and it will make sure 3 episodes will fit, i'm quite sure that nero does that as well.

I've been looking for something like convertxtodvd, but it's not free and the trial version leaves watermarks.
 
I used to "have" a program called something like TMPEnc that did a great job creating DVDs. You can obviously tell by my use of "have" that I may not be able to divulge where I procured said app.

TMPGENC is the absolute best when it comes to converting and creating media. The quality is astounding. I haven't used it in a while though.
 
the new version of TMPGENC is very nice indeed but it takes sooooo long to convert

Well it helps if you have a Core 2 DUO CPU cos it makes use of that, and even though it takes longer than other encoders, you can see the why it takes longer when you see the quality of the final product.
