I know many of you :sick: when one starts talking about fast food fried chicken. But my impression is that it is mostly about the hygiene and the re-use of old oil, etc.

So it might be a good idea to work on and share the methods of making fried chicken at home.

I don't have any recipes or methods to share at the moment because my earlier attempts were just chicken with a shell around it ... kind of like an egg. :D

My hope is the DJ.. can give a few tips regarding the molecular science of frying chicken in a batter.

You should Google the KFC recipe.... there are tonnes out there.

They give you good ideas on the techniques as well... the long and short of it is that you need the oil at the right temp

I know.

But still, my problem is always the batter. I never get it ... even with the online recipes ... to be the same as KFC.
 
To me using a pressure cooker is the most important part in keeping the chicken juicy.

Use a nice big one and add just enough oil to cover one layer of chicken, then fry it in several batches.

It cooks quickly like that.

Obviously you need to take care as the oil gets very hot and a pressure cooker can be dangerous.
 
2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
3 tbsp MSG (called Accent or Zeal in supermarkets, an important ingredient)

Mix all ingredients well in a large bowl.
Although the ingredients and proportions used above are correct
(use finely ground ingredients only, or grind them yourself),
the cooking process is difficult to match as not many people have
an oil pressure cooker handy, the following method approximates the
outcome fairly well for home use.

Dip chicken pieces in beaten eggs
Then turn them over in regular bread crumbs (commercial)
Finally plunge them in the flour-spices mixture (above)
Heat oven to 350 degrees
Place chicken in a tray and cover with foil (shiny side out)
Cook 40 minutes.
Remove the foil then cook for another 40 minutes
Baste lightly with oil 5 minutes before the end
Let stand 5 minutes and serve
 
Another one:

6 cups Crisco Shortening
1 eggs well beaten
2 cups Milk
2 cups Flour
2 teaspoons ground pepper
3 tablespoons salt
1 teaspoon MSG
1/8 teaspoon Garlic Powder
1 dash paprika
2 Frying Chickens cut into 6 pieces
Place shortening into the pressure cooker and heat over medium heat to the shortening
reaches 400F. In a small bowl, combine the egg and milk. In a separate bowl, combine
the remaining six dry ingredients. Dip each piece of chicken into the milk until fully
moistened. Roll the moistened chicken in the flour mixture until well coated. In groups
of four or five, drop the covered chicken pieces into the shortening and lock the lid.
When pressure builds up cook for 10 minutes.

Don't know where you'll get Crisco Shortening.
 
My recipe depends on how I feel but has the following as the base:

Flour, black pepper, salt, aromat(instead of all msg)
Then add other spices as I feel sometimes paprika or chili flakes or peri peri etc

mix a cup of milk and one egg in a bowl then dip chicken 1 at a time followed by a dip in the flour mix

Put in the fridge for a few hours and cook in pressure cooker (you can re coat before frying if you want it thicker )

Edit: Forgot about marinading the chicken in some lemon juice, herbs and salt beforehand to flavor the meat.
Otherwise the meat is a bit bland.

SCARY :eek::eek: but sounds delicious :D
 
MSG = Monosodium Glutemate, which enhanses flavours and has been at the center of a fair amount of media attention over the years. As with anything we stuff into our faces, it should be used in moderation

The guys tries hard but it's difficult to get that exact blend even with MSG. The most important thing though is their specialised industrial pressure-cooker which is not sold to anyone outside of the KFC brand.
