Kombucha Brewing

It’s like everywhere, even filling stations lol

Not in Durban, unless I'm just going to the wrong filling stations lol. I found a shop though since writing that comment called Sun-Sun who has it and all kinds of other cool Asian foods.

Dischem sells it and most health food stores

Filling stations with a Woolworths would also have.

I have managed to cultivate a huge healthy scoby which is being kept in a 'scoby hotel'. I'm happy to give out some pieces so you can start your own if you are happy to pick up in the fourways area.

Nice, how is your Kombucha brews tasting?

Haven't made in a while, I've been too busy, but generally very nice, especially flavoured with ginger, lemon and some honey.
I typically add ww fruit juice for my flavors they have a decent variety and they play nicely with the kombucha for the second ferment and carbonation

Hey peeps just received my Kombucha starter kit, pretty darn excited to get brewing. Thus far my only experience of Kombucha has been drinking the Woolies one, which I like very much, so I'm quite a noob. I got myself this little kit from TA - just wondering if anyone else started out with a kit like this and what was your experience?

I see only black tea or green tea is mentioned, my question can I get fancy with it and get some flavored teas like grapefruit tea or things like that? Would it still work?

How careful do I have to be about sterilising my jars? What's the best method to sterilise a jar to grow it in?

TIA

You can get fancy, but only flavour after the tea has brewed. The yeasts and bacteria will eat anything and the resulting flavors will not be what you are looking for, so you only want to be feeding the scobi black or green tea and sugar.
We like to flavor ours with berries, lemon juice and ginger tho we also like it plain.
Then we bottle it and let it carbonate for about a week, again if you leave it too long you get unwanted flavours from the yeasts and bacteria eating the flavoring.
I tried both black and green tea, but we now only do green tea because its so much nicer.

Always try be as clean as possible. I used to brew kombucha and then brewed beer. Beer is 100x more sensitive than kombucha but remember its better to be more sanitary you are growing living goodies whether good or bad.

Dont drink too much at a time either not more than 0.25 cup your first day, this stuff tears through your system till its used to it.

These vids should help.

I always brewed black tea then added juice once poured in bottle for second fermentation then its nice and fizzy too.
