So, I can't imagine all the liquid is going to have boiled away by 6:00AM?

Large pot, half liquid, full to the brim, lowest temp.

Thoughts?

Not a pressure cooker I hope :D

a slow cooker cooks for about 8 hours so it should be fine. Just on low heat though.

If the pot seals tight and the heat is not excessive, and water does not boil away, then it should not be a problem leaving it overnight to simmer over a low heat.

Or get a slow cooker.

That's what they're for.

As long as your smoke detectors are operational you'll be alerted to any problems.

Easy, set the alarm for 2 am. Check & adjust liquids, continue sleep like a boss..

Slow cooking it in the oven would be a better bet.

This might just be the most sensible course of action, with the added advantage that I can switch it off and it will be cool enough in the morning to chuck what I don't eat in the fridge.

But ultimately, the more I ponder this, the more I am starting to think that I will be unable to sleep, with that pot bubbling away in the back of my mind.

Not a chance I'm trying that. Feel asleep once with something in the oven. It was very dead 8 hrs later. That scared the f out of me & cured me of the cooking while sleeping idea for life
