What on earth can you do with it ?

I have tried many versions and am running out of ideas.

I have done mince and spaghetti, mince pot pies and cottage pie.

What else ?

not really... if they really big chunks of potatoes then it could be weird, but if they smallish I see no reason why not to try it

Make some spring rolls or samoosa's out of it

Or use it as filling in a roti roll or pie.

You could also try making a scone ring out of it. Think savory swiss roll.

why can't you just freeze it and use it later?

i do a moussaka / cottage pie combo which works out nice:

add lentils/pulses to mince mix and put on bottom.
top with ratatouille layer (aubergine, tomato, spinach, peppers)
top with a thin sweet potato mash
you can do this twice if you want more layers.
sprinkle with some mozzarella & bake.

Mince is awesome on home made pizzas. You can even buy pre-made pizza bases to make it easier.
