Meat/braai Smoker help

Oh ja used oak chunks I had cut for me out of logs... 10/15cm long by 5 cm square. Hickory or apple weber chips will be fine.

Where did you get such clean oak
Arbitrary wood guy in Tokai innie kaap. All oak on the right. Plum on the left, Rooikrans and olive up front. Please excuse the mess! Wind and retiling on the go!

Bought a Camerons years ago . On the Cadac stove top with oak chips it does a medium size snoek in 20 minutes !!
 
Question Grant - you still using weber brand chips? FOKKEN expensive, hey?that's why I had the oak cut down. Fuuuuuck that! 130 a bag? Uh uh

A friend of mine owns a manufacturing business making container homes and we built it over a long time after hours. It cost R15k. We recently mounted it on a small trailer and im currently branding and finishing it off as its going to be a small business catering at markets and entertainment venues. Heres my logo.

I read that if you season and strip the bark off black wattle it has the same taste profile as hickory, the Aussies smoke with it. But use it lightly as it has a strong flavour.
