How do you prepare it?

I normally just sautee with onions and garlic and some herbs.

I need inspiration and variation.

Stuffed brown mushrooms:

Buy the biggest you can find.
Empty the contents of a couple of pork sausages, mix with some diced bacon, basil/thyme, an egg and breadcrumbs to form a thick stuffing.
Spoon the mixture onto the shrooms and pat down.
Cover with your favourite cheese and bake until the cheese is golden brown, bordering on crispy on a buttered baking tray.

Goes great with a lightly wooded chardonnay.
 
A smear of olive oil in a pan on medium heat until tender. I mainly use button shrooms in white sauces or raw thin slices in salads. Black mushrooms I usually sprinkle some grated mozz cheese and grill them for a minute or two. I like using the more pungent variety of shrooms in cheese sauces or rich chicken and mushroom pie. I eat mushrooms everyday. All the pretty colours.
