Yup, there are choices, one where you convince the Atlas to keep the present galaxy, but it than wants you to bring it new stuff.
 
Just to clarify, was @AlphaJohn talking about the Atlas conversation in the expedition and @Lupus is talking about the main game Atlas path outcome?

Birth a New Star (Reset / Submit)
    • What it does: You birth a new star, triggering a cinematic and resetting your position. You can choose a new galaxy type (such as Lush, Empty, or Normal). [1, 2]
    • Reward: You receive the Star Seed blueprint. When installed in your exosuit, it grants extra health and lets you see black holes on your galaxy map without asking Polo. [1, 2]
    • Pros: Acts as a shortcut to a fresh galaxy and completes the quest with a definitive narrative ending. [1, 2]
    • Cons: Moves you out of your current galaxy, though you can still teleport back to your bases if you left them behind.

Refuse the Atlas (Decline)
    • What it does: You reject the Atlas's offer and stay in your current galaxy (typically Euclid).
    • Reward: You receive the Mark of the Denier blueprint.
    • Pros: Keeps you right where you are without changing galaxies.
    • Cons: Closes the questline immediately with less narrative resolution. You cannot change your mind later unless you reload a save made before making the choice.

I've done it a number of times on different saves and always taken the new galaxy route.

I feel like exotic ships have been much harder to find than when I first started playing the game in 2021/22. I've got 2 now of that ball/royal shape that you found and somewhere along the line I found a squid and immediately grabbed it because I just never see them.
 
I want to try this game for the first time, but it looks really overwhelming to be honest.

Would it be "easy" to pick and play as an absolute n00b?

Start a new save, there is a tutorial.

There is a good wiki and I'm sure AI can help you through the beginning.

This guy makes nice videos and he has a recent series for new players that looks useful.

I personally think this latest expedition is a perfect starting point. Has a brief overview of everything without going in too deep and at the end you have a decent ship and multi tool to start your own adventures.
