So, I posted on Nokia's Facebook page asking them about the update issues. See their response below:

Hi Robvd, seems there was a technical issue with the releases for some phones after we changed the System Updates to only be delivered via Wi-Fi - the technical team has corrected this in the Android 9.0 Pie release, which will be available within the next 4-7-days in South Africa. We apologise for the inconvenience, as it seems only a small portion of phones were affected that we've now picked up, thanks to the information you shared

That's great news. Let's see if their promises hold up

Indeed I am also currently downloading Pie on my device currently on May 2018 Security Patch Oreo 8.1 and its downloading straight to 9.0 Pie with September security patch
Just a note for people. I have seen multiple reports of initially when upgrading to pie some users say that their battery life took a knock as much as 1-2 hours of SOT initially. Don't know how widespread this is but apparently it resolves itself after about a week worth of charge cycles and has been attributed to google's new adaptive battery feature where it (possibly) allows apps free reign in the beginning and then gradually starts clamping down on apps you don't use very often hence the possible initial battery hit.

Looks like my complaining worked haha! Downloading the update now.. Let's hope all the small issues has been fixed.
 
One thing I have noticed is that swiping right on the homescreen to open the Google app isn't lagging anymore. Happy days. It really irked me, as my old phone (with lower specs) didn't have that problem.
 
Two things I am loving
1. the entire volume button interaction experience is way better now.
2. The little rotation option that pops up in the nav bar when you rotate the phone is a godsend
