I'd like to know which variables affect the size of font on the GUI since in my instance I have an nvidia + intel graphics powered laptop though switched to nvidia all the time, and the thing is that when I boot the machine without any external devices attached I have normal/big font but when I boot connected to an external monitor + mouse I have nice small graphics which I prefer thus I'd like to know to maintain such a setup.

BTW: I'm running on Ubuntu 14.04 with KDE as my main desktop environment.

It's all based on resolution.
If your onboard gpu can't support the same resolution then it will change it to the closest match generally.
