So my father is running a pirate version of office on windows 8.1, the only thing he uses there is Outlook. I would assume that if he had to update to windows 10 it would no longer work. I am right? Also are there any alternatives to outlook and is there a way to export his profile on outlook
Updating a machine to a newer version of Windows with Office installed will require you to reactivate Office because of the way Microsoft implements some of its hooks into the operating system (as in, it thinks its just been installed again).
I currently use Gmail through Chrome, and use the Chrome Apps launcher to put it on the taskbar. I never have to worry about missing e-mails, syncing calendars and contacts, or figuring out backup schemes because it'll be years before I have to buy more storage space. Using tags, the simple and
actually functional rules and filters are easy to master (and more importantly, work, unlike Outlook on the desktop), and I've had no need to create folders, only categories. There's also the experimental Google Labs features you can tinker with:

Another option is Microsoft Outlook Online. Access it, and OneDrive and the Office Online apps, with Internet Explorer 11, and pin the sites to the taskbar. Pinning them using IE11 gives you some shortcut options through the jump lists, and Outlook Online is also very powerful. I'd also recommend showing your dad the Office Online apps and getting him to either ditch his pirate version and use those, or take out an Office 365 subscription.
I'm never going to install or use Outlook ever again. It's bloated, it's buggy, has shown no signs of life from the Office dev teams, and for some ridiculous reason shares a colour scheme with Word.
