no, i'm not clever enough to NOT use one... and I don't call them recipes... I call them addresses... LOL people are like WHAT?! and I'm like... well, an address takes you where you want to be, so it's a braai pie address, no?

Ingredients:
2 x roles of puff pastry, probably dependent on how big you want the thing to be.
1 x pack of bacon bits
1 x green pepper
1 x Onion
1 x pack of mushrooms
Lost of Mozzarella cheese and Cheddar, or whatever flavour you like.

Method:
- Fry bacon and mushrooms to liking
- Slice onion and green pepper into desired sized (some like it small, other like it bigger)
- Take a braai grid that can close (no idea the proper English name, Afrikaans its a "toe knyp rooster". Lay down 1 piece of puff pastry.
- Add ingredients. Close with another piece of puff pastry. Don't lock the grid together, otherwise the pastry will break leaking out stuff, it is just easier to turn on the fire this way.
- cook over a medium or even less heat fire, you just want the pastry to get cooked and the cheese to melt, other ingredients should be ready to eat.

This was the first time I made it, but I would recommend maybe lining the grid with foil or something as the puff pastry did tend to stick to the grid a bit. Every time i turned it, which should be often, i had to push the soft pastry back through the grid again. Next time I'll definitely use foil to get past this issue, and then it should be easier to get out of the grid as well once cooked.
I was also thinking of adding some feta next time, as I'm quite the feta fan, don't know why I didn't think of it in the first place.

Here is a recipe for an awesome dessert dessert I've made a few times. Definitely not LCHF but I urge you to try it.

Ingredients:

8-12 croissants depending on the size. I normally use two packs of those Woolworths croissants. They are softer and easier to slice.

1 jar of Nutella.

2 punnets of cream.

2 vanilla pods.

Flaked almonds (a small bag).

Vanilla ice cream.

Directions:

Turn the oven onto 200.

Pour the cream into a saucepan or pot and place on a medium heat.

Split the vanilla pods (youtube it if you don't know how) and empty the contents into the cream. Also add the pods and whisk the cream so that the seeds disperse. Leave to simmer for about 15 minutes

Slice the croissants diagonally (it makes the slices longer), about 1.5cm thick.

To assemble:

Place a layer of croissants into an oven dish (see photo). Using a small spatula or knife, spread a layer of Nutella over the croissants (they don't have to be completely covered). Then sprinkle a layer of flaked almonds over the Nutella.

Keep repeating the process and adding layers until you have used all of the croissants.

Pour the vanilla infused cream over the top layer (do it quite slowly, letting the cream absorb into the croissants).

Cover the dish with tin foil and place in the preheated oven for 10 minutes. After 10 minutes, remove the foil and cook for another 10 minutes or until the almonds and croissants are slightly toasty brown.

I posted a couple of Asian dishes - the chili/lime chicken is quasi-Asian I guess, and the pork ball soup is very much so. I'll see if I have others. Lol it's only to be expected that a ZA forum would have a vast majority of braai/curry/casserole dishes though.
 
Okay here's a Chinese recipe I made recently:

Pork and mushroom steamed buns
Ingredients for dough:
300 gms Wheat Flour
1 1/2 Teaspoons Fresh Yeast
1 Tablespoon Sugar
1 Teaspoon Salt
2 Tablespoons Oil
240 ml Water

1. Put the water, oil, sugar and salt together in a mixing bowl and mix thoroughly.
2. Add the yeast to wheat and mix, pour in the liquid from step 1.
3. Knead the mixture into a dough.
4. Cover with moist kitchen roll.
4. Leave for 30 minutes at room temperature to rise.

Ingredients for filling:
200 gms Pork Mince
1/2 Green Pepper
1 Onion
5 Garlic Cloves
2 Large Mushrooms such as shLtake
1 Egg
30 gms Coriander Leaves
1 Tablespoon Maizena
2 Tablespoon Oyster sauce

1. Pound the garlic and peppercorn together in a mortar.
2. If the shLtake mushrooms are dried, soak them in water for 5-10 minutes.
3. Chop the shLtake mushroom, green pepper, onion and coriander, into fine pieces, add the pork mince, the pounded ingredients from stage 1, the oyster sauce, egg, and mix.
4. Dissolve the Maizena with 2 tablespoon of water and add into the mixture.

Preparation:
1. Cut the dough into 30 gm pieces.
2. Cut the grease proof paper into squares.
3. Roll each piece of dough flat. You can add a little oil to the rolling pin if the dough sticks.
4. Put a teaspoon of the filling in the middle and fold the dough over to form a parcel.
5. Press the edges together and tuck the seam under the parcel to form a small 'bun' shape.
6. Place in frying pan on medium heat till outside is browned.
7. Once both sides are brown, add water to 3/4 the height of the buns and simmer for another 5 minutes to get the inside fully cooked.

Serve with a dipping sauce.

Here is a lovely recipe that I tried this weekend. I reckon it will be a bit moister if you perhaps use Buttermilk instead of milk.

SPINACH AND FETA MUFFINS.

Canola oil, to grease
375g (2 1/2 cups) self-raising flour
250g (about 1/2 bunch) English spinach,trimmed, washed, dried, shredded
150g feta cheese, crumbled
110g (1/2 cup) chopped semi-driedtomatoes
2 tbs finely grated parmesan or vegetarian hard cheese
330ml (1 1/3 cups) milk
90g butter, melted
1 egg
1 tbs chopped fresh dill
2 tbs finely grated parmesan or vegetarian hard cheese, extra

Step 1
Preheat oven to 200°C. Brush twelve 80ml (1/3-cup) muffin pans with canola oil to lightly grease.
Step 2
Sift flour into a bowl. Add shredded spinach, feta, tomatoes and parmesan, and stir to combine. Use a fork to whisk together milk, butter, egg and dill until well combined. Add milk mixture to flour mixture and use a metal spoon to stir until just combined (do not over mix).
Step 3
Spoon mixture into prepared pans. Sprinkle with extra parmesan. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Turn out onto wire rack to cool. Serve warm or at room temperature.
 
Chilli Bean Quesadilla

Tortilla:

Ingredients:

  • 2 cups flour
  • 1/2 teaspoon salt
  • 3/4 cup lukewarm water
  • 3 tablespoon vegetable oil

Method:

Combine ingredients in a large mixing bowl and knead until smooth(about 10 minutes, add more water/flour if required). Leave dough to rest for about 10 minutes.


Filling:

Ingredients:

  • 1 can(400g) red kidney beans, drained
  • 1 large onion, chopped
  • 1 tomato, finely chopped
  • 1 medium green pepper, chopped
  • A few green chillies, finely chopped
  • 1 bunch coriander, finely chopped
  • salt & pepper to taste
  • 1 cup cheddar cheese, grated

Method:

Combine beans, onion, tomato, pepper, chillies and coriander in a saucepan over medium heat. Season to taste with salt/pepper. Roughly mash beans with fork while mixing. Only heat ingredients enough for flavours to combine(a minute or two until mixture is warm) do NOT cook!

Set aside filling and prepare tortillas as follows:

Divide dough into 8 even pieces and roll each piece on a lightly floured surface. Each tortilla should be 16 to 18cm across. Fry 4 tortillas in a lightly oiled non-stick pan over a medium heat on both sides until light brown.

Then spread the filling evenly over the 4 tortillas and sprinkle with grated cheddar. Lastly, fry the next 4 tortillas and place over the the grated cheese straight off the pan. The hot tortillas will melt the cheese.


Variations:

  • Try a different cheese of your choice
  • Works almost as well with cannellini/barlotti beans
  • Add crushed garlic to filling to keep away vampires
  • Make 2 large quesadillas and cut into wedges like a pizza

Spinach and egg frittata

Ingredients:
1 lb spinach leaves (about 2 bunches), cleaned, chopped
1 Tbsp olive oil
1 medium onion, chopped (about 1 cup)
1 large clove garlic, minced
9 large eggs
2 Tbsp milk
1/3 cup grated Parmesan cheese
Sun-dried tomatoes, about 2 Tbsp chopped
Salt and freshly ground pepper to taste
3 oz goat or soft cream cheese

Instructions:
1 Preheat oven to 180
2 Cook spinach in 1/4 cup of water in a covered saucepan until just wilted, a couple minutes. Drain water and set aside.
3 In a mixing bowl, whisk together eggs, milk, and Parmesan cheese. Add in chopped sun-dried tomatoes, and sprinkle with salt and pepper. Set aside.
4 Sauté onions in olive oil in an oven-proof, stick-free skillet, until translucent, about 4-5 minutes on medium heat. Add garlic and cook a minute further. Add cooked spinach and mix in with onions and garlic.
5 Spread out spinach mixture evenly on bottom of skillet. Pour egg mixture over spinach mixture. Use a spatula to lift up the spinach mixture along the sides of the pan to let egg mixture flow underneath.
6 Sprinkle bits of soft cheese over the top of the frittata mixture. When the mixture is about half set, put the whole pan in the oven. Bake for 13-15 minutes, until frittata is puffy and golden. Remove from oven with oven mitts and let cool for several minutes. Although the pan may be out of the oven for a few minutes, the handle is still very hot.

Shepherd's Pie

Ingredients

1 tablespoon vegetable oil

1 onion, chopped

1 pound lean ground beef

1 teaspoon dried basil

1 clove garlic, minced

1 cup green beans

1 cup tomatoes, diced

2 potatoes, cooked and mashed

1 egg, beaten

1/2 cup water

1/4 cup shredded Cheddar cheese (optional)


Directions

Preheat oven to 350 degree F (175 degree C). Coat a 2 quart casserole dish with cooking spray.
Heat oil in a large skillet over medium heat. Cook onion in oil for 5 minutes, stirring frequently. Stir in the ground beef and basil, and cook and stir for 5 more minutes. Mix in the garlic, green beans, and tomatoes, and simmer for 5 minutes. Transfer beef mixture to prepared dish.
In a mixing bowl, mix together the mashed potatoes, egg, and water. Spread evenly over meat mixture.
Bake in a preheated oven for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, and continue cooking for 5 minutes.

supplement Ingredients with Carrots and other veggies for a more wholesome taste. . .

One of my favourite recipes I'm proud to share with you:

FuLL_MeT4L's Butter Chicken

Ingredients:
10ml oil
800g chicken (diced)
2 medium onions (chop fine)
1 can of tomato puree
100-150g butter
2tsp crushed garlic
1 tsp fresh ginger
1 tsp fresh chili (add more if you like it hot)
1 tsp cayenne pepper
1 tsp black pepper
1 tsp salt
2 tsp garam masala
2 tsp coriander
1 cardamom pod (chopped/ground fine)
150ml yoghurt
250ml cream

Method:
1. Heat oil, and brown the chicken
2. Add onions and sauté
3. Add all except yoghurt & cream, and cook covered for ~25 minutes at medium heat
4. Add yoghurt & cream, and simmer covered for 5 minutes until hot throughout
5. Serve over rice
