Should be spelled Braai Paai just so people are sure that it rhymes!

Ingredients:
2 x roles of puff pastry, probably dependent on how big you want the thing to be.
1 x pack of bacon bits
1 x green pepper
1 x Onion
1 x pack of mushrooms
Lost of Mozzarella cheese and Cheddar, or whatever flavour you like.
Method:
- Fry bacon and mushrooms to liking
- Slice onion and green pepper into desired sized (some like it small, other like it bigger)
- Take a braai grid that can close (no idea the proper English name, Afrikaans its a "toe knyp rooster". Lay down 1 piece of puff pastry.
- Add ingredients. Close with another piece of puff pastry. Don't lock the grid together, otherwise the pastry will break leaking out stuff, it is just easier to turn on the fire this way.
- cook over a medium or even less heat fire, you just want the pastry to get cooked and the cheese to melt, other ingredients should be ready to eat.
This was the first time I made it, but I would recommend maybe lining the grid with foil or something as the puff pastry did tend to stick to the grid a bit. Every time i turned it, which should be often, i had to push the soft pastry back through the grid again. Next time I'll definitely use foil to get past this issue, and then it should be easier to get out of the grid as well once cooked.
I was also thinking of adding some feta next time, as I'm quite the feta fan, don't know why I didn't think of it in the first place.

Tortilla:
Ingredients:
- 2 cups flour
- 1/2 teaspoon salt
- 3/4 cup lukewarm water
- 3 tablespoon vegetable oil
Method:
Combine ingredients in a large mixing bowl and knead until smooth(about 10 minutes, add more water/flour if required). Leave dough to rest for about 10 minutes.
Filling:
Ingredients:
- 1 can(400g) red kidney beans, drained
- 1 large onion, chopped
- 1 tomato, finely chopped
- 1 medium green pepper, chopped
- A few green chillies, finely chopped
- 1 bunch coriander, finely chopped
- salt & pepper to taste
- 1 cup cheddar cheese, grated
Method:
Combine beans, onion, tomato, pepper, chillies and coriander in a saucepan over medium heat. Season to taste with salt/pepper. Roughly mash beans with fork while mixing. Only heat ingredients enough for flavours to combine(a minute or two until mixture is warm) do NOT cook!
Set aside filling and prepare tortillas as follows:
Divide dough into 8 even pieces and roll each piece on a lightly floured surface. Each tortilla should be 16 to 18cm across. Fry 4 tortillas in a lightly oiled non-stick pan over a medium heat on both sides until light brown.
Then spread the filling evenly over the 4 tortillas and sprinkle with grated cheddar. Lastly, fry the next 4 tortillas and place over the the grated cheese straight off the pan. The hot tortillas will melt the cheese.
Variations:
- Try a different cheese of your choice
- Works almost as well with cannellini/barlotti beans
- Add crushed garlic to filling to keep away vampires
- Make 2 large quesadillas and cut into wedges like a pizza
Quesadillas were a big success!
