Hello.Got a team building next month and out activity is to make a potjie.Anyone here have a receipe to share.Either Chicken or Beef. Our team name is the Jalepeno Poppers but any other suggestions for a team name is welcome.
 
Just some hints:
- Cook your meat well upfront (high heat) in the case of beef and lamb (esp. oxtail = BEST meat for potjie but takes plenty of upfront cooking (like at least an hour)). Else make sure you brown the chicken nicely. Seals in flavour.
- Gnocci gumplings added to the pot at the end makes for a nice twist, instead of rice or pap or whatever.
- A bit of pork browned with the meat adds plenty of flavour.
- If your sauce is tomato-based, bay leaves are a great addition.
- Carrots are tough and require the most cooking of all veggies.
- A potjie attachment for a gas bottle ensures even heat and less admin that a fire/coals.

I don't have a recipe - I just wing it normally. Good luck.

5 hours later serve on rice.

Jees, all we can think about is how much we'll be drinking.

1.5 liters of wine o 2kg of meat sounds like a lot. Also any booze in the food at a company thing is a bad idea. You never know if there is a muslim or ex alkie in the party.

Yep. If you brown lamb (neck) and bacon, it will be great unless you burn it.

Keep stock/water/wine high enough, but below the veggies - which should steam. Eggplant and whole mushrooms are good.

At the end you can add cream to any potjie - personally I like this on occasion.

The ex-alkie can make his objections known, but a closet muslim at a company team build, that would be a bit of a problem really.

Surely people would have wondered where he disappears to every Friday after lunch?
 
Beer, lots and lots of it.

And a small quantity of beer can also be added to the pot.
 
my buddy made this and an awesome dish

Ingredients;
1 x Onion
1 x Green Peppers
Garlic
Ginger
2 x Chilli
Oil

Chicken - I like to buy the leg and thigh pack and then also some chicken breasts (these you can cube or slice into strips)
Mixed Veg (Pnp normally has a Potjie mix in the veggie aisle. But you can actually try any of them)
Green Beans - Remove the ends and rinse
Mushrooms - cut into slices or chop up, whichever you prefer
Baby Potatoes - rinse and leave whole
I sometimes also add the Mielies which have been cut into smaller sizes

Chicken Soup x 1 packet
Mushroom Soup x 1 packet
Cream - 250ml


Directions:
Chop the onions and green peppers together. If you don't have chopped garlic and ginger then chop this too (depending on size of pot, about 1 or 2 tablespoons of garlic and ginger). Slice chilli and remove seeds. Warm the pot and add oil, then throw in one sliced chilli. Once the oil is very hot add the chopped onion, green pepper, ginger and garlic. Cook till brown.

Once it has browned you then add the chicken. I like to spice my chicken but it's not a necessity. If you want to do so though you can use any of your fav spices for this. Cook the chicken completely, making sure not to let it get stuck on the sides and bottom (adding a little water helps this. Not too much though, you don't want to turn your pot into a soup).

You then add your veggies in the following order: First the mixed veg, then the green beans. Once these have cooked for a bit I recommend that you remove the leg and thigh pieces from the pot (otherwise they tend to cook away) and then add baby potatoes and mielies. You will also have to add some water to ensure that nothing burns. You'll have to play it by ear, just try not to add too much. Add both soup packets and allow everything to cook. The biggest thing to check on now is your potatoes, I find that slicing themin half helps them to cook faster. Once they are cooked you add your chicken again, then the mushrooms, and then the cream. once everything's in let it cook for another 10 minutes at least, so that all of the flavours can combine.
 
if you are doing chicken, buy cornish (a lot tougher and takes longer to cook), for beef oxtail is the winner. a bit of curry powder, use baby carrots, baby potatoes and sweet corn, baby onions and quartered gems towards the end with a packet of brown onion soup. mix the brown onion soup with a little water (not the amt recommended on the packet) you are making potjie and not stew :D

Thanks for all the tips and beer ideas.I am going to try I am Sams potjie.I just need to figure out how long this process takes.We plan everything in advance.
