Potjie recipes

Cook until you can shake it out of the skin. If it insists on climbing out of the pot it is not done. It is only done once you can shake it out of the skin.

We have all day. I get judged between 16:30 and 17:00. My mate has agreed to give me a crash course in potjie. He makes killer potjies...

True, but then again it's quite original. Think Mac 'n Cheese in a potjie.

I personally would not use biltong though, rather fry a whole stack of bacon in the pot to start off with, then add the mac, then the cheese and fried bacon. Coming to think of it, it may be even better to supplement the bacon with a shredded smoked eisbein...

Garnish with spring onions and garlic and season with cayenne pepper.

Could work.
