I make my own pretzels, very easy and tastes authentic. Trick is to get the correct ratio of bicarb of soda when doing the water boil step.

I use 1/2 cup bicarb to 8 cups water. 30 seconds in the bath - 15 for each side.

I use less, i find to much bicarb makes it very bitter.
