A second controller, configured correctly, stored out of the machine, plus daily backups. Depending on criticality, some backups must go offsite on a regular basis. Regular testing that you can restore backups. Daily checking of the backup logs. RAID controller configuration stored on media off the machine if possible. Preferably a second backup device in another machine - you will look silly if the backplane has gone funny and wrecked your backup device and they don't make them any more. Regular restores on second backup device to ensure readability. Never place tapes on your subwoofer when transporting offsite.
Edit. Don't be a cheapskate with backup media. If you aren't you will kiss your ass in gratitude one day. If you are, you will kiss your ass goodbye one day!
