Tuna pasta Salad

This you make according to how much you want

pasta ( Cooked Drained cooled and drizzled with olive oil to stop from sticking together. )

Cheese cut into small cubes
Boiled egg Cut into small cubes
Canned Tuna
Onion diced
tomato cubes
Lettuce
( and everything you like in salad I add fresh basil celery radishes depends on what is in the fridge )

Salt
Black pepper

Mix it all together with mayo and a table spoon of chutney and bobs your uncle. The mayo is optional you can just toss it with salad dressing
 
One more
( also you will have to judge how much you need )

Pasta ( cooled rinsed and drizzled with olive oil )
Fresh sweet basil (4 hands full)
Cherry tomatoes

salt
Black pepper

Mix together with mayo.

Tuna pasta salad inspired by salade niçoise?

How about:

Roma tomatoes
Green beans (boiled in open pot, then cooked for a ~30 seconds in olive oil / butter with seasoning, leave to cool down for a while, chopped however presentation requires)
Some leaves: rocket, lettuce, spinach (torn or not depends on presentation / size...)
Runny basil pesto as vinaigrette (blend together: olive oil, pine nuts, basil, garlic, grated parmesan cheese or basically any other fromage à pâte dure - not sure of english term, lime / lemon juice)
Gnocchi as pasta ( which is boiled potatoes sieved / well mashed, mixed with seasoned flour and an egg, probably need around 250g potato 75g flour and a small egg. roll into sausages with around 1.5cm? diameter and then just cut off into little pieces with knife. then boil in salted water...)
Pitted black olives
Red onion (chopped into rings would be nice)
Fillets of tuna, seared and chopped into strips .
Aaand then some hard boiled duck eggs (could use hen eggs Q_Q but duck is 10x better) peeled and quartered.

Probably a bit pricey, but hey. Good food is good.
 
Basil Pesto
Macaroni, cooked, drained, cooled
Salami
Feta cheese.
Salt and ground pepper to taste


Cut the salami and feta into small cubes, mix it all together. Season to taste.

1 eetlepel botter

400 g kaaswors, in wieletjies gesny

1 ui, fyngekap

2 knoffelhuisies, fyngekap

2 koppies hoenderaftreksel

1 blikkie (410 g) All Gold Mexican Diced Tomatoes

½ koppie room

250 g skroefiepasta

sout en peper na smaak

1 koppie cheddarkaas, gerasper



1. Braai die wors en uie saam in botter in ’n diep pan of swaarboompot vir 5 minute. Voeg die knoffel, aftreksel en tamaties by en bring tot kookpunt.

2. Voeg die pasta by, sit die deksel op en verlaag die hitte sodat die gereg vir 10-15 minute prut.

3. Geur die pasta na smaak met sout en peper, en sprinkel die kaas bo-oor.

I think my mom went to the grave with this recipe. She would brag how she could get kids to eat it over dessert and she would always make when having friends over for dinner who also had kids - just to prove she can make any kid eat spinach. I had AI help me reconstruct it.

Cheesy spinach bake

  • Preheat oven to 180
  • Fresh spinach finely chopped (you can use any large leaf type)
  • Mix 7 large eggs and about 3/4 (three quarters) cup of milk
  • Add salt and freshly ground black pepper to taste
  • Mix spinach into the egg mix trying to get everything covered
  • Transfer to a large oven friendly baking dish, no need to grease if glass
  • Top with grated cheddar cheese, enough to form a crust when baked
  • Bake for 30 minutes
  • Let it rest for 10 minutes
This is a protein rich meal on its own or a perfect veggie side.

Leftovers can be frozen and reheated.

I like to make my own Crunchie bars (honeycomb candy dipped in Cadbury chocolate):

On low heat add 2 cups of caster sugar and about 5 tablespoons of syrup and bring to boil until it becomes golden (about 50 seconds into boiling on low heat) without stirring too much. Then quickly add 2 teaspoons of bicarbonate of soda while stirring really fast and immediately transfer to a pan ready with wax/baking paper. Let cool for 2 hours before covering in melted Cadbury milk chocolate.

Be careful not to overcook the sugar and not to add too much bicarbonate of soda - it will blow up and your face will end up like Freddy Krueger from A Nightmare on Elm Street.

A proper lasagne, not some cheapskate south african version.
Also a proper boere chicken pie.
Both can be made the day before and just heated 30min before you want to eat.
Pulled pork with a nice sweet bbq sauce also a bit different than the normal SA xmas things
