Last week a registered a new .com domain for a project Im working on.

This was done via Hetzner

Now all of a sudden Im getting tons of spam emails offering web / app development.

Does anyone know how they monitor the domain registrations and pull your details automatically?

Secondly does anyone know how to stop this without changing the associated email address?

Simply mark as spam or delete the emails and you are sorted? I've never had that issue with any of the domains I've registered through Namecheap or Domains.co.za.

Spammers mine the Whois database for addresses and spam those - it’s not unique to any registrar and is very common. Use private registration or create a dedicated email address with filters for registration purposes.

I am experiencing the same thing! I get around 10-15 email's from web developer's mostly from India offering to design blah blah blah my website. It's very irritating because each email is from a different person, sigh, so I have to spam report them one at a time.

Its not registrar related, its mass whois lookups that they find new domains on and then send you spam.

As quovadis said, use private registration. Otherwise another option is a good email infrastructure with spam mitigation.
