Samp and Beans recipe

Does anybody have a nice samp and beans recipe. My wife and I have been wanting to try making it for a while now, but just never get started.

I'll see if MrsC can post it when she gets back. It's a very easy recipe.
 
Just rinse the beans in cold water to remove any gritty bits, then boil them for a few hours (without salt - it makes the beans tough), then add the samp (also rinse it beforehand to be sure) and boil until everything is soft. Only then can you add salt. Drain excess water and add salt, pepper and a dollop of butter. Mmmm.

Well, that's just the most basic way to prepare them... of course you are free to add whatever your heart desires once they're ready. I personally enjoy making a samp and beans chicken casserole, with chicken pieces, chicken stock, veggies, spices, curry powder and a couple of potatoes added to the mix. Really is quite delicious.
