You can also generate a self signed certificate from the CA and then you just have to import it into the computer's browser that accessing OWA but buying a digicert is just so much easier and better.
Ok, so cutover is happening this Saturday (considering my last day is Monday...)
I have managed to get the services of an exchange guru to help me out.
Will try remember everything the guy does and any tips/tricks and repost here.

Well, that was a process...
Firstly, doing a P2v on a DC/exchange box is a nightmare...
Be prepared to sort out all sorts of awesome issues.
Spent the entire saturday doing this, eventually gave up and redid the P2v.
Sunday morning the VM seemed much more stable!
The actual migration was pretty straight forward. Had very few issues, however the mailbox move took forever. 25 mailboxes took over 24 hours to complete...

just 3 issues remain and I can get this company off my back and never have to deal with the mother truckers again!
They want to enable "search on server" IE they have iphones, and only store mail on them for a month, but they reckon exchange 2010 allows you the functionality of searching on the exchange server for a mail from your iphone. Is this possible? How do I enable this sucker?
no 2. Sometimes, when these guys email, it shows as sent from their domain name instead of their "wanted" email address.
EG username is michaels email should be [email protected] It is showing sent from [email protected]
How do i stop it doing that!
no 3. They have an [email protected] that gets used. Occassionally, when mailing this, there is a bounce back email:
The server has tried to deliver this message, without success, and has stopped trying. Please try sending this message again. If the problem continues, contact your helpdesk
however, this mail is delivered? Any clues?
There is a guaranteed case of beer or bottle of something tasty as gratitude for anyone who can shed some light

1. Not sure if it will be possible on an IPhone but what they are talking about is with Exchange 2010 you can create archive folders on the exchange server itself. SO users' archive emails will get stored there. Then when accessing it from say owa you are still able to view your archive emails. Very doubtful it will work on the Iphone thou.

That is only Exchange 2010 Enterprise edition
Works on Standard but you need enterprise CALs.
I found this very step by step guide..
I know OP migration was from normal Server 2003 to Server 2008 with Exchange 2010 and not SBS 2003..

I saw this post a bit late but it's quite painless to migrate SBS mailboxes to 2010:
1) Join your 2008 (64bit) serverA to the SBS domain. (as a member server)
2) promote it to a DC & transfer the SBS-owned FSMO roles.
3) install Exchange 2010 (same Exchange organization as your SBS box)
4) do a "local mailbox move" - inside the Exchange 2010 management console - move the mailboxes from the SBS box to the Exch2010 box (into the newly created Information Store)
** Exchange2010 will automatically update AD, so next time your Outlook clients connect they'll access their mailboxes on the Excgh2010 box.
** Set the "failed message count" to 100. If you don't do this and Exchange 2010 sees a corrupt message it aborts the mailbox move (annoying)
5) Once all SBS mailboxes are migrated remove the SBS box from the domain.
6) If DCpromo on the SBS box fails (it sometimes does) then do a "ntsutil /cleanup" on the 2008 box and remove all references of the SBS box from AD.
7) Install your 2nd 2008 box as a domain controller (or whatever) and re-install your old SBS box as a whatever.
Exch2010 is 64 bit - you need LOTS of RAM and RAID5 or higher. (to be safe)
