Scrambles eggs with yoghurt

I'm constantly trying out experimental recipes for my gastronomical restaurant (set to open in 2020) and this morning I made scrambled eggs with fruit yoghurt.

I usually add a little milk to to my eggs before whisking them but since I was out of milk I decided to try scrambling them with some mixed fruit yoghurt.

Fruit flavoured scrambled eggs, delicious!

Try some creme fraishe. Add it once the eggs are cooked. Then add some tomato, chive basil or whatever.

Bruschetta (Rub bread with garlic, basil pesto, olive oil and toast in a pan or under grill)
Bulgarian yoghurt spread on bruschetta
Scrambled eggs on top of yoghurt
Black forest ham pieces on top of eggs
Finish off with some slivers of red peppers and season to taste

The above is very yummy! You can also add cheese, tomato, basil leaves etc etc
