Separating Wi-Fi clients

I have 2 Cudy AX3000s that are hardwired to my mikrotik 3011 running a single SSID with 3 types of devices connected to it:

Normal "home" network machines
IOT devices
Guests

How can I separate the traffic without impacting speed or wifi reach? Multiple SSIDs? VLANs?

Create separate VLANS for 'physical' separation then create SSIDs to each VLAN as needed for additional separation. You can then route traffic between the VLANS as needed, e.g. Normal to IOT but not IoT to Normal. Guest to nothing but the internet
 
As above.

You want to create VLANS for at least IoT and Normal network each with its own DHCP server and IP range and SSID.

For the Guest the Mikrotik has some built in Hotspot functionality that can take care of this for you and does client isolation etc.
 
And the multiple SSIDs won't cause congestion and affect speeds too much?
