Quick question,

Should it be normal practice for a dealership servicing your car to check what was done previously for servicing/maintenance on a specific car at the same dealership seeing they keep records

Some of them don't even look at the service schedule for the service to be done.
Had my wife's Polo for the 90 000 Km service at VW Menlyn, it had 89772 Km on the clock at that moment in time.
The 90 000 service prescribes a cambelt change. The invoice stated that the cambelt is still in a good condition and should be changed at the 90 000 service.

Wtf was the car with them for?

I currently have the situation where my car went in for its 100k service for the second time with the dealer. Long story its first 100k service was around 97k due to a problem with my ignition which they replaced only a year before so i though just bring it in early. Had a bit of a hectic 3 months with a lightning strike and subsequent fire at my property. checked my car last week realized it is at 99700 (forgot about the service i did at 3 months ago due to all the issues with insurance after the fire at my property) and decided to book it in for a 100k service. when filing my invoice i just checked my last invoice and realized it went in for 100k service less than 3000Km 3 months ago. So pissed of with myself but pissed of with the dealership as well for not picking it up (and the 100k isn't cheap)

Cambelt is between 90-120k

If the car is on a service plan they are only allowed by VW to change it when the car hits 120k

The car is not on a service plan and if you read the sentence, "The invoice stated that the cambelt is still in a good condition and should be changed at the 90 000 service." again, you would realise that it was in for just that, the 90 000 Km service.

I understood your post, they maybe meant 105/120k service and made a typo. Anyway stay away from Menlyn VW, go to Hatfield VW you'd be surprised how much better their service is.

Went for my 90000km service about 6 months ago. They said that my rear brakes need to be changed and this was noted on their system. The brakes are still fine. They will probably push for the brakes to be changed in the next service due to them making a record of it before. I'd rather replace them when they are worn out.
