Smokey mushroom risotto recipe...

Thanks for Sharing this recipe DJ... wanted to have it since you mentioned it last night :) So I shall be making this tonight - I have all the ingredients at home :) :)
 
I haven't seen that. Have you watched the No Reservations episode in El Bulli?

.. I have to say it's one of the experiences one could pay just about any price to have.

I haven't seen it, no. Oddly enough, I hardly ever watch cooking shows. I find them condescending, annoying, bland and full of fallacies. I like Tony Bourdain though, just haven't given much of his no reservations series a watch. Watched the curry episode in Penang though, after I visited his favourite curry house. I concur with him - best curry in the world...

You have liquid smoke? Impressive. Just remember to use it by the drop - it is potent stuff...
 
:( I know, but I will make a mushroom risotto then using your ingredients :) I am sure it still will be delicious!!

Where do you get liquid smoke? I've read about it, but can't recall having seen it anywhere.

I buy mine online. Found a local supplier on bidorbuy - costs about R100 for a small bottle but it lasts for months...
 
At least make a list of the darn ingredients :mad: ?

Onion
Leeks
White wine
Mushroom stock
Chicken stock/vegetable stock (actual stock - not those fake cube things)
Arborio rice or any other short grain, high starch rice
Mushrooms - your choice which variety
Liquid smoke
Parmesan cheese
Mustard
Salt
Pepper

The technique is vital though so follow the steps I posted in the OP...

Trust me on this one and buy the liquid smoke. It makes the best bastings for braais as well, mixed with other ingredients. You'll land up using it more than you think.

EDIT: and if you cock up the risotto the first time, don't worry. Many people do - I did the first time I cooked it. I turned it into glue. Just keep practising...

Aaaand you're about to tell me who that local supplier is, right? :)

It's really not that difficult and I've never ended up with anything less than awesome risotto (only made it for the first time around 2-3 years ago).

And on not listing the ingredients: I tend to do the same, but bold the ingredients so I can tell at a glance what's needed. Perhaps you can do the same here, so those interested in recreating what you've posted can pick up on the ingredient list easily?
