I am looking for a nice inexpensive soup recipe with lots of flavour. No starch and little carbs. Fresh ingredients only. No potato, lentils, barley, rice crispies, pasta, beans, soup packets, vegetable stock, cornflakes etc.

Vegies are good. Soup meat is cool. Herbs are lekker. Coffee is fine.

We do a big pot of chicken noodle soup whenever someone gets even the sniffles. Freezes well.
 

I am assuming you have veggies since you want to make veg soup.

Chop onions, carrots, celery, leek. Chop garlic, saute it in 1 table spoon of olive oil. Put chopped veggies, saute for a minute and put 1 litre of water. Let it boil and then simmer down for 30 minutes. Put some herbs you like (parsley or mixed herbs) at 20 min mark and strain and use water as veg stock.

You can use bayleaf/pepper corn/whatever spices you like when you start boiling. Gives it a bit of zing.

Jokes aside, that looks good. We might give it a try. We made a veg and leftover Ostrich fillet soup last night. Fantastic.
 

Chilli Soup



Ingredients:


  • 1 cup fresh green chillies, de-stalked and chopped, or red dry chillies (keep seeds)
  • 1 lb (450 g) tinned or fresh tomatoes
  • 1 large onion, chopped
  • 4 cloves garlic, chopped
  • 1 inch (2.5 cm) fresh ginger, chopped
  • 1 green pepper, chopped and de-seeded (optional)
  • Salt

Spices:


  • 1 teaspoon mustard seeds
  • 1 tablespoon dry fenugreek leaves
  • 1 teaspoon mustard powder

Method:


  1. Boil 2 ½ pints (1.5 litres) water, and add all the ingredients. Simmer for a minimum of 30 minutes, maximum 1 hour.
  2. Strain, if you want to serve as a consommé, or you can serve it as it is, with the vegetables.
  3. Or you can purée the soup after cooking. Simmer for a further 20 minutes minimum.
  4. Salt both soups to taste, and a final touch can be achieved by adding any bottled chilli sauce (Tabasco, for instance) to taste.

Serves: 4–6

This will put some hairs on your chinny-chin-chin! (or maybe take them off.)
 
Soup is the easiest thing to make.
Add stewing beef to a pot. Add literally whatever veggies you want with it and boil/pressure cook it for a few hours till everything disintegrates. Add salt pepper and whatever herb you like and eat. Don't want meat soup, remove the meat. Don't want carbs, leave potatoes and carrots and rather add cabbage broccoli leaks etc. Only thing I don't add is tomatoes as the shyte we buy in this country make everything sour.
Cheap and easy soup. Cut butternut, boil for about 30-40m. Mash up and add water to get right consistency. Add salt, pepper, chilli flake and fresh cream.
 
I'm very tempted to put a double espresso in some meaty soup with some chilies. My favorutie steak on the braai recipe is:

Thick fatty T-Bone Steak. Ground Coffee. Chillie Flakes. Salt. Cocao powder (no sugar).
