Yip, time for my foodie Q again :)

How do you prepare spinach?

Need new inspiration !

I normally fry onions and garlic, sometimes add some chilli, and tomatoes, and then add the spinach and sautee.
 
Start with frying the onions and garlic, a couple of chillies also goes well. Then add in some grated or pureed tomatoes and simmer for a while like you are making bolognaise. Then add some chopped button mushrooms.Cook for a few minutes, then add spinach and cook a little more. Put mixture into oven proof dish - top with cheese and bake for 5 -10 minutes.
 
I am planning to make spinach pesto pasta tonight.
 
Not exactly a Spinach dish, but it has a lot of spinach, so try it.

2 x soles from woolies (skinned etc)
1 x casserole dish with lid
1 x full cream
1 x baby tomatoes (rosa)
1 x Onion
1 x bag of spinach or chard
1 x fish rub (woolies is fine)
1 x mixed herbs
1 x butter
100 - 200ml of white wine (not sweet - go with Chardonnay)

How to:

Butter the caserole dish properly all over.
Place the two soles on the bottom
Use the herbs on the fish and on the tomatoes a little later.
layer with the tomatoes
layer the spinach
layer the onions
FILL with cream to cover at least the fish, more is always better when it comes to cream.
Add the wine

Pop it into the oven on 180 for 25 - 30 mins (depending on how many soles you used, and their size - i sometimes use 4 fish).

Take it out, and serve with asparagus (cooked in lemon and black peppe) and your choice of vegetable or salad.

Its frikkin delicious, tender and healthy (ish)

You can add milk and ground (as in grind) nuts.

I could have sworn I asked about another veg, but anyway, I have a bad memory so it is possible!

I would also like to hear Ava's recipe.
 
I do something different that works out quite well.

Fish or chicken breasts, grilled.

I then take an onion, chop fine, and brown, with some mixed herbs, and aniseed. (in olive oil)
I then take green beans, chop them up and cook for about 2 mins with the onions. I then add coarsely chopped spinach on top, and place a lid on the fryer, and wait 2 - 3 mins, just to soften the spinach. I then use this as a bed for the chicken or fish. If I want to make it a bit more interesting, I add pineapple chunks

Pierce twice with a fork

Microwave on high for 3-4 min's

Take out and leave for 1 min

Then serve [i do add feta and black pepper though].

Don't have a recipe, as such, but I can tell you how I do it :p

Fresh spinach (baby spinach preferred), toasted pine nuts, roasted garlic (although raw should work too), salt, black pepper, lemon zest and a bit of lemon juice in the food processor. Pulse and add olive oil as needed to make it all come together. Add some parmesan in there too (or if you're making a lot and plan to freeze some, which I think you can do, leave the parmesan out and just stir into the pesto you'll be using).
Same as basil pesto. In fact, add some basil leaves in there too if you'd like.
Add to boiled pasta, and add more salt & pepper & parmesan as you like it.
Enjoy.

This can be done in a pestle and mortar too, but it takes forever! (Or I only have a really small one and need a bigger one). Another option, if you're so inclined, is to chop everything up into fine slivers and mix together. But that's way too time-consuming and you end up with a rougher pesto.

Yummy, thanks! I have a food processor, so making pestos is no problem. This looks easy and delicious - my kinda meal.
 
I had some things to use up the other day, so I tried something that sounds strange but actually came out well:

Broccoli & spinach, steamed then cut into tiny pieces and mixed with some cooked macaroni. Then whisked together 2 eggs, crumbled feta, plain yogurt, pepper and various herbs as well as some biltong dust, mixed into the pasta. Then some grated cheese and paprika on top and baked until no longer runny (in my microwave it took about 20 min); grill to brown on top.

I'm pretty sure most people would leave out the biltong. :) I'll probably replace it with something like bacon, next time.

There was leftover pesto, but it was so good we then made pita and used the pesto as a dip. No leftovers. :p

Another awesome dish with spinach is Spinach Risotto with Goats Cheese. Well worth the 25 minutes it takes to make it.

Awesome tip on the sesame seeds - didn't know that! Do you need to process the seeds at all, or just sprinkle them straight on top?

Oo, ze great idea, thanks! I'm not a fan of limp, cooked spinach so we usually just use it raw, shredded in salads

Just tossed them in the food processor with the rest of the stuff for the pesto.

If you want to use it as a parmesan substitute in other dishes, just grind toasted sesame seeds with a little salt until crumbly (sort of like finely grated parmesan).
