Whatever hdmi is labeled arc needs to go into your sound bar, but cheaper sound bar only have 1 hdmi in nothing out

Yeah but just use the TVs if you want to use optical.

The challenge comes in with the Dolby Sound if it is through a different source. But gonna give the TV a bash first when I get to it! At least nice to know the TV Box has support as well.

Tv should output dolby through arc and optical, if it supports it

That would be the correct cable yes, I use this with my MiBox.
Also an option if you have an existing toslink cable lying around: adapter only

As Lupus said, just use ARC ( on in this case eARC )
I have the same Hisense EK7 and use HDMI1 to SoundBar ( if you going SB route that is, this would be best and not mess with adapters & other cables etc ), then HDMI 3 to MiBox ( got pc/laptop connected to HDMI 2 )

So I found this little cable and thought ill give it a go.
Left and right works, but the bass amp only produce sound when something is on the right. Lol. Was worth a try I guess.

You are basically trying to fit a 'round peg' (3.5mm mini-jack audio connectors) for a 5.1 analogue PC sound card compatible 5.1 'surround sound' speaker system into a 'square hole' (HDMI) for digital Dolby Audio compatible TV sets / Streaming boxes and hoping that it can be done with a lot of additional cables / converter boxes and 'Heath Robinson-style jiggery-pokery'.
You will never get true 5.1 digital surround sound unless you have a AV amplifier / decoder that has S/PDIF inputs (from the S/PDIF outputs of the TV or Streaming Box) AND 3.5mm mini-jack audio connector sockets for its dedicated surround speaker channels to be output to your '5.1 surround speaker' setup.
