I can't replicate the problem where it supposedly doesn't maximise all the way to the Dock.
My Dock is hidden and any window maximises to the full length of the screen.
What it doesn't do is consume the full width, but this is MacOS by design only maximising in width up to the underlying contents.
Safari will only maximise to the width of the underlying website, Mail will consume the whole screen etc. Chrome will also consume the whole screen and make all that unnecessary white space.
I now noticed that this only happens with MS Word and sometimes Finder but none of my other apps so far.

I recommend the following settings for the Trackpad - as an aside, the two 'pictures' that you see are dynamic - as you hover over each available option, the screen on the left shows you how/where your finger/s should be positioned and doing, while the effect of what you're doing is shown in the 'video' on the right.This video was useful.
