My last stout I brewed :)

Aegir actually inspired my next brew project.

I am doing a smoked s'more porter/stout

For those that dont know what a s'more is its this

So I am aiming for around 8-10% want to age this for next winter, think the following notes:
- Toasted marshmallow
- Light cinnamon biscuit
- Chocolate
- Touch of campfire smoke

Its an ambitious brew almost 10 grains with cocoa nibs, toasted marshmallow, vanilla beans etc. But going to be awesome to pull off.

Last year I did a coffee and condensed milk pastry stout that I think I nailed so this is this years ambitious project.

After this will be a fruitcake stout for Christmas :) maybe not everyones cuppa tea but another fun one to try.

Home brew for me is chasing the craft, I am trying to produce home brew that is craft level and I would be happy to pay R40+ a bottle for. I can make up to 40l at a time but at the moment im doing micro brews of 18 x 440ml bottles a time to try a little more experimental brews. Cannot wait to get cape side to let inspiration run wild :)

I have also made a sorghum batch after reading 5 scientific articles to see how to incorporate it as a homage to Apiwe from brewsters. Think it turned out great!

So i am super keen to try Soul Barrels sorghum beer. Thanks for the recommendations all!

Holy schit...colour me impressed!!

Would love to taste some of those, especially the stouts you have made and are planning. Sounds awesome...and better value than R50 per can.

Thanks for the kind words sincerely appreciate it!

Its a lot of work, to make 18 bottles or 40l is almost the same amount of time required, its the labour of love though. Your imagination is the only barrier here. Thats why im super keen to get that side and try things I cannot get my hands on easily for the next round of inspiration. Planning a sour to in the near future.

To put cost into perspective an 18 bottle batch can cost R100-R300 to make depending on the hops used in particular and would avg R200. Also ensuring you reuse yeast as yeast can cost R100 a pop but its free if you reuse a specific strain.

Time about 6 hours on brew day and then two weeks to ferment and then bottle conditioning takes 1 week to years :)

I am glad the age of IPA is coming to an end, its my absolute least fav style, I can appreciate it but wont go out my way to get it. Love NEIPAs though

Followed that up with these 2...bot so different and unique and amazing.

The Marshmallow Bourbon has roasted marshmallow on the nose and crisp, fresh acidic blue berry on the palate. Incredible stuff.

The Choc Shakes tastes like...well...chocolate milkshake made with 99% pure bitter chocolate...with beautiful vanilla on the finish. Worth every penny...
