Afaik the kegs are still carbed with CO2 - nitrogen is just used when serving.well that depends, your large commercial brewers like SAB use the CO2 from fermentation to inject back into the product prior to packaging to get the desired CO2 levels right, it's also used in the packaging process to purge kegs of oxygen
Some brewers (Guinness) use nitrogen instead of CO2, this gives the tighter, creamier head, problem is nitrogen is not as soluble as CO2 in liquids
