Firstly i am no cook but i can make food...not as good as my mother but i try my best.What really pisses me off is i bloody cant fry an egg sometimes and i get very pissed when the yolk breaks in the frying pan.

Lets me ask you this .. if you had 10 eggs to fry how many on them will be broken sunny side up and how many when you flip them over.
My best on a good day is 7/10 will be good.I cant seem to get a 10/10.....any advice on this
 
One yoke broken on the crack and maybe another on the flip.
 
Dont flip it over. Rather steam the top then you will get perfect eggs 10 out 10 times.

So after the egg sets add a little bit of water and cover the pan with the lid and as soon as the egg white on the top sets you done (if you like runny yolks)

Crack the egg with the back of a thin knife that minimises the chance of rupturing the yolk when cracking

Ok but in a non stick pan with a little oil ...is this not dangerous
 
9/10 will not break, either flipped or sunny side up.

This can also depend on the type and age of the eggs. I find that on a couple of our local free range brands the yolks tend to break consistently when cracking the egg into the pan
 
You never flip a sunny side up egg, then it is no longer sunny side up, nor is the yolk a little runny, which is the ONLY way you eat a fried or boiled egg..

Who wants to eat yellow play dough... Yuck..
Nope some of the best runny egg yolks is with flipping the egg.
I do steam it mostly, but its easy to then start cooking the yolk to much.
Just a lit on quickly after you put eggs in pan, don’t even need to add water. You do need a glass lid to keep an eye on them

Not dangerous you not deep frying the egg lol. Its only a tablespoon or 2 of water put it on the sides of the frying pan. It must boil off quickly

This, also do this never fails.
 
I can do 10/10. Do it a lot for the wife. For myself I like to break the yolk and just mix a bit.

that my friend is so true also.I think sometimes the egg is already broken cause i am not that careless.i think this is what happens...lol
 
i just made rib burgers and eggs now for me and my son..late night snack...lol
i freakin broke the yolk... gawd damn..why... why
Well if you want to flip it there is a few tricks.
Firstly you need patience, do not hurry cracking them and putting in pan, and also not when flipping, be careful.
Secondly do not put the temp to high, most people don't like a crispy hard white at the bottom and if your temp is to high you going to turn them when the white is still too runny because you scared the white will turn crispy.
Thirdly, do not pick them up high and flip, its more of a rollover.
Lastly, make sure you have a good nonstick pan. No stainless pots or cast iron. Even the best quality nonstick pans last about a year or two before they not really very nonstick anymore.

The water is optional - not needed, BUT then concentrate on frying the eggs.

If the yolks break the dish is scrambled eggs no longer a fried runny egg.
