The egg test

Crack the egg with the back of a thin knife that minimises the chance of rupturing the yolk when cracking

Selecting an egg to fry:
  • Choose fresh eggs, that have a firm yolk sac. The difference between a fresh egg and an old egg can be seen by the height of the yolk -- it is higher and firmer in fresh eggs vs flat in old eggs.

Cracking the egg:
  • Make sure that when separating the two halves, the egg is held near the pan or bowl surface. Dropping it from 30cm above may look impressive in a cooking video, but in reality the impact can break the yolk membrane.
  • Also, try to master the above first using two hands, before attempting the single-handed egg crack so favoured by Youtubers.

Frying the egg:
  • Baste the yolk while frying, don't just leave it in the pan. Bring hot oil from the pan onto the yolk by gently spooning it over using a spoon, or gently flicking it using a spatula / egg lifter.

Lifting and placing the fried egg:
  • Be gentle when lifting it and placing it. This is the point where I usually break most of my fried eggs.
  • Shake the pan sideways to release the egg, while gently coaxing the reluctant bits free with an egg-lifter.
  • Once the egg is free, gently scoop and lift it, this is a gentle but firm, smooth and swift motion. If you fail at this, practice by picking up dog poop using a garden spade. It's easier when you use the inertia of the poop, and the sliding friction of the spade to your advantage.
  • Once the egg is scooped up, hold the lifter over the pan and tilt it slightly for a few seconds to allow excess oil to drip off.
  • Let the egg gently slide off the egg-lifter onto the plate, once again, keep the lifter near the plate when doing so, don't drop it from 30cm above

The back if a knife is perfectly flat. It's also thin which applies enough pressure on the shell to Crack it without using too much force thereby not disturbing the contents of the egg. It also provides a neat clean crack lowering the chances of having shell fragments

And as a bonus you don't get egg on your counter/board

To test egg age, put it into water in a mug. If it lies down it's super fresh, if it tilts one side up it's a bit older but fine...if it floats you should probably throw it away.
 
eggselente....i will try all the advice given here, will try tonight when loadshedding is over.Someone said use a knife to crack the egg....gonna first try that one as i use the spatula to crack the egg,nogal a plastic one ..mayby that is why this freakin eggs break
 
Firstly i am no cook but i can make food...not as good as my mother but i try my best.What really pisses me off is i bloody cant fry an egg sometimes and i get very pissed when the yolk breaks in the frying pan.

Lets me ask you this .. if you had 10 eggs to fry how many on them will be broken sunny side up and how many when you flip them over.
My best on a good day is 7/10 will be good.I cant seem to get a 10/10.....any advice on this
You could always do them in the oven, pretty sure that's how a lot of restaurants do them.

How old are your eggs?
Older eggs yolks tend to break easier, I also fund jumbo egg yolks to be more fragile.

Also breaking your eggs on a flat surface helps reduce the chance of the yolks breaking

What do you mean "flip them over"?
You don't flip them over when frying eggs. Put a lid on it.

OMG you don't know what you missing out on. No fried egg can beat a perfectly cook flipped over easy egg. No crispy hard brown egg white with soft yolk.
I do steam sometimes when I make breakfast for many and the pan is to full to flip them, but the best taste is still to flip them.
 
If frying an egg doesn't work out then you've just made scrambled eggs..

I couldn't make a decent omelette so I watched YouTube and practiced until now my omelettes brings all the boys to the yard. Seriously I am known as the 'letty king just believe in yourself.

But I digress, try frying an egg in a non-non-stick iron pan, takes you a while to get the hang. I sometimes deep fry them in the wok, crisp edges FTW..
 
Dirty bastards... do you still eat eggs? You DO know that an egg is the unfertilised period of a chicken, in a shell? Eggs comes out of the same pipe that a chicken shits/poos from, fark me you okes are sad.
