Ek het die pakkie weg gedonner, stoor my spice in 'n airtight container. Hy is die doodgewone crown national pakkie net met die ranch spice sticker op as jy 'n rep vra sal hy jou dadelik wys. 1 downside hulle doen nie kleiner as 3kg sakke.
 
Thinking of taking a chance this week and contacting Crown National & Freddie Hirchs for some promotional stuff for our Biltong community.
 
Got some Crown chilli bites spice today. Anybody know if I should make them any differently? Still soak in vinegar for a whole and then spice and hang?

You need to reduce soaking time to 6 hours max otherwise you might run the risk of having a vinegar taste. If you are someone who likes a potent chillibite add more paprika, the Safari mix is mild.

6 hours? holy crap, I soak my biltong no longer than 2.5hours, chilli bites the same, chilli bites could actually do with less than 2.5hours to be honest.

If I leave my biltong in longer than 3 hours, I get a vinegar taste.
 
Wow 6 hours! I lightly line dish with spice, lie meat down, spray with vinegar and repeat. Leave meat to sit for 60-90minutes. Rince spice off with vinegar/water mix, place on paper towel, rub generously with spice, light spray with vinegar, hang.

Sunbeam Biltong Maker, original fan replaced with computer fan running of 5V DC power adaptor, and 18W Energy saving globe just generating enough heat. I found 40W+ is too hot and 12V fan speed too strong. Meat dries out too quick and skin becomes glossy and extremely hard/tough.

It seems that there is no exact bulb wattage and fan speed when it comes to this biltong making thing. It all depends where you are, if the air is dry or moist (highveld vs coast), air temprature, season, etc etc... One just have to find what works and take it from there...

my biltong maker has been empty for more than a week now... /sad panda - must wait for pay day

did have a piece from my dad though over the weekend. just made me miss my own biltong more

Funny how one feels one has a superior recipe once you make your own! Must be a man thing!
