It looks fine in the photos and those were the better pieces. In real life it's more red and the inside is mushy. I like my biltong like I like my women: wet and soft, but this is more like half raw. Funny enough the second batch without the light were even drier on the outside and redder inside than the batch with the light.

yeh, because the light is not there to dry out the air. on the highveld we have mostly dry air (very low humidity) so it's easier for us.
 
My first attempt didn't turn out very well. It looked how Slingshot described. I'm going to try leaving the light off for the first 24 hours this time.

yep only that from the look of it

paddy make your own mix with salt pepper and crushed coriander and add bbq spice and chilli as well

if you want your own spice mix
 
maybe he should try a bought spice, if he made it himself, just to make sure....
I use bought spice. The problem with bought spice though is all the other karp that is added to the spice mix. Some folk don't like it and prefer to make up their own mix, but then you could get your ratios wrong and then you spoil the batch. whenever I try a new spice mix I use the old spice mix (trusted) on all the other pieces of meat and then leave one piece of meat aside and spice that with the new spice mix.
 
yeah you can get the ratios wrong

all i do is add some of something and mix all together

this new batch i think is going to be very strong with spice

can smell the biltong after last night and its strong
 
Just bought a melleware. :) I built a big dryer in the past, but space constraints at the moment. I have some dried trinidad scorpion pods so i will be make nuclear chilli sticks.
