IMG_20140503_114604.jpg Looks like my local Pic n Pay caters for biltong makers. In a fridge they had huge cuts of topside & silverside ready for slicing and spicing. This is one of them. A huge 8kg beast.

Against? So then in other words you cut through the sinew?

Have a look at the pic I posted to see what I'm talking about. You'll hold the grain running horizontal and slice up and down...
 
Someone needs to figure out what the recipe is for BiltongZA's (Wonderboom Junction) droewors. Best I've had! I find myself there way too often to buy a R100 pack.
 
My sister wants chicken biltong ..how ?

Chicken fillet is used but do you also add vinegar on it to keep it from going off ?

From my understanding the process is much the same but seeing that if not done correctly chicken can cause serious health issues I would rather not go there.

chicken biltong? nee jirre. that's like a veggie burger. or a egg plant steak. its just wrong. chicken is a vegetable and should be treated as such.

I'm looking into getting a biltong drier (Mellerware one) and I just have a few questions:

1. Does the drying process make the place smell? I have a small place and dont want the whole house to smell of biltong.
2. Is the Mellerware drier any good? Have heard good & bad things about it.
3. Any good buthchers in JHB where I can get some decently priced meat?

1. Yeh, it does a little. But once you smell it, you won't smell it again. But nothing too bad. Not like biltong smells like dog poo or anything lol
2. It gets the job done. Yeh, it's made of plastic, but so what? It keeps the goggas out and it dries your meat. You don't need anything fancy for that simple function.
3. Depends in what area you are. I just buy silverside roast from pick n pay whenever its on special.

Nope. I just buy the roast and slice it myself. Sometimes use the smaller pieces to cut even smaller for chilli bites.

With dry wors I just buy thin boerewors. Not all of them taste good when dry, so first just buy one pack until you find a nice one. I only found one now that I can actually use. I have thought about going to a butcher and ordering some, but he'll probably want me to buy in a lot more bulk than what I'm prepare to pay for.

Just a little worried about the smell, cause the misses doesn't want it to stink the place out. If it does smell, is it a strong smell and does it linger?
