I realise that Worcestershire Sauce contains vinegar and other ingredients. The point I was trying to make was that I used to use a vinegar/Worcestershire sauce ratio of 60/40. These days though its only Worcestershire sauce. I am using this new recipe because I like the flavour it gives the biltong, I could not care two hoots about MSG & vinegar etc. Its purely a taste preference. don't knock it till you have tried it.

I really like your recipe PW. I have about 3kgs (before drying) meat coming out tomorrow. Which will be my second batch with your recipe.

On the mould issue, I introduced a fan yesterday after the first bit of mould occurred. Wiped it off with a bit of vinegar and it has not come back since the fan was installed.

I fitted a 12v PC fan attached to a variable voltage transformer, so now I can control the speed of the fan also, which is great. Also went back to a 40w bulb in the new configuration as per ZenBaas's thoughts. Will post pics during the course of the day tomorrow.

On a side note, the fan in the old Melleware box died some time during Sunday night. The box was only 7 months old, but a bit of further research suggests this is a common problem. Pick 'n Pay replaced the box with no quibble, it has a two year warranty.

Fo4 my next batch I'll definitely be trying the Worcestershire only recipe. I have been doing a 50/50 mix of late but I'm keen to try something different. I'll also try some of PW 's homemade recipe as well.

I have plenty bought spice blends and have tried them all. I have found that my own homemade blend is best suited to my taste buds. I don't add any preservatives or MSG for that matter. Let me also throw a spanner in the works, I don't use vinegar either.

You get manual and electric biltong slicing machines. It was discussed quite a few pages ago but is completely worth it in my opinion. :)

I have a batch in the dryer, which is basically as dry as I like it. this is about the 5th batch I have made using The recipe. I am happy with the taste profile.
 
So is mine. When I put in a batch I first have to spend 10 minutes fap fap fapping it.

EDIT: I just tried tapping it… and the bulb broke. :o It was a nice 30w halogen too.

bwahahahahahana! My dad's one the fan broke in the first week. He went and bought a normal pc fan, and the thing has been running better than mine if i'm honest... been considering for a while now to maybe build my own... maybe i'll do something over the holiday period.

Normal PC fan is 12V, fan in Mellerware is 220V.

yeh, my dad did have to do some kind of hack job, think he put it on some old charger/transformer something something... but it works.

obviously i'll consult my dad-the-all-knowing when i plan to build my own. he works with his hands, i'm just a keyboard-warrior.

I've got a ton of 12v fans and even more 12v power supplies…

I've also got a 220v fan from an old air hockey table - overkill? :D

I would be interested to know what he did, so a couple of pics would be nice ;)

Earlier in this thread someone gave me a link to a supplier of fans. I've been wanting to buy one (more than one actually), but with our dear PO being in its current state, I didn't want to risk it. As Bwana said, everyone has PC fans lying around (albeit still attached to old PCs), so that could be a work around.
