The Official Biltong Enthusiasts Thread

Hi Guys,
In the process of reading all 98 pages,currently on page 9, but thought I can short-cut quickly.
My daughter and her fiancée bought me the Mellerware biltong king. Is it still too humid to make biltong? Must I wait for April/May first? The unit does allow for a light, will the light allow me to use it sooner?
I would rather listen to the experts than RTFM.
I'm no expert but living in Jhb, I didn't need the light. After 2-3 days with the fan it is ready. Beware though, the fan is prone to pack up.mine just did and I returned it. Need to build my own box. Good luck and enjoy

Thanks for the feedback. Will go get some Silverside tomorrow. I will keep an eye on the fan, thanks.
 
are you in jhb? or anywhere except durban? if yes, make biltong whenever you want.

I should have mentioned, yes, East Rand.

Very informative thread, thanks. I've returned to this wonderful hobby after many years (pics to show it happened below, hope it works!), but I need some advice. I have one of the very first Mellerware biltong makers. I'm having some issues with those ****** tiny fruit flies getting through the vents.

Should I bother shooing them out or is it not a big deal? If they are a bother, anybody got some advice for keeping them out of the vents? Obviously can't cover it up completely, so would layer of thin gauze do the job?

Fan is a VERY easy replace. Basically comes with a cheap *** computer fan, standard size and very simple to replace with a better one once/if it packs in. I know this is a bit of a backward move, but they'll just fit it with the same POS parts. Hopefully it won't break!

That, is an amazing looking piece of bilo's, misprint!

How do you salt your meat? If you remove most of the moisture then there should be no smells left to attract the flies. It is a risk you run making biltong in the summer.
 
Probably asked before but where's a cheap place to get some biltong cuts for drying in Cape Town?

Any PnP will have topside or silverside for a good price.
The butcher manager at the V&A is amazing and if you tell him it's for biltong, he'll sort you out with the special stuff he keeps at the back...
 
Yeah, I remember that from years ago when I did it.
There weren't many in total (maybe one or two).

I did a salt rub twice (once with some vinegar, then rinsed and another rub which I put straight in...maybe worth letting some moisture out first and patting down with some kitchen towel to remove more moisture before....will try that, thanks!)
